Nectarine-mango jam with sparkling wine

Ingredients for 4 servings:

  • 3 nectarines, yellow, fully ripe
  • 1 mango(s), fully ripe, low in fiber
  • 250 ml sparkling wine (rosé sparkling wine), dry
  • some lemon juice
  • 500 g gelling sugar, 2:1

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Peel, pit, and chop the nectarines. Peel the mango, remove the pit, and chop it. The fruit should weigh about 500g (better a little more than less). Place the nectarines, mango, lemon juice, sparkling wine, and gelling sugar in a saucepan and puree with a hand blender until (very) small pieces of fruit remain. Bring to a boil for 5-10 minutes, stirring continuously. Pour into rinsed, cleaned jars while still hot. Makes about 4 x 200ml jars. P.S. You can also try adding chopped lemon balm just before filling.
