Heat all ingredients, except the lemon juice, slowly and gently in a large saucepan. Let it steep for a few hours (stove off). Heat again before serving until the mulled wine is steaming. Season with lemon juice to taste. The apple juice makes the mixture very sweet. We pour the mulled wine either through a tea strainer into the cups or into the teapot, which we keep warm on a teapot warmer. Garnish with a slice of lemon in the cup. If it’s too sweet for you, you can dilute it with your favorite tea (rooibos, black tea, or fruit tea).
