Oatmeal quark pudding

Ingredients for 4 servings:

  • 65 g butter
  • 4 eggs
  • 150 g sugar
  • 1 lemon(s)
  • 250 g quark
  • 250 g fine oat flakes
  • 2 tbsp flour
  • ½ pack of baking powder
  • 250 ml milk
  • some salt
  • Fat for the mold
  • Oat flakes for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Separate the eggs. Beat the butter, egg yolks, and sugar until fluffy, add the grated lemon zest and juice, and fold in the quark. Stir in the oats, flour, baking powder, milk, and salt. Beat the egg whites until stiff and carefully fold in. Pour the batter into a greased, oat-covered pudding dish. Cook the dish in a water bath for 1 1/2 hours, then turn out onto a plate and slice. Serve with any kind of compote or fruit sauce, or even fresh, sugared seasonal fruit. Any remaining slices can be fried in butter for another meal.
