Ingredients for 2 servings:

  • 4 eggs
  • 2 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 tsp lemon juice
  • 2 tbsp butter or margarine
  • powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Foam omelette

Separate the eggs, beat the egg yolks with the sugar, vanilla sugar, and lemon juice until thick and frothy. Beat the egg whites until stiff peaks form and fold into the egg yolk mixture. Heat the oil in a pan, add the batter, and smooth it out. Bake with the lid on for 15 to 20 minutes on the lowest heat. Once the omelet is cooked on top (do not turn it over), slide it onto a plate and top with fruit, jam, or chocolate to taste, then sprinkle with powdered sugar.
