Ingredients for 6 servings:

  • 1 kg bacon, green
  • 500 g onion(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the bacon into cubes approximately 1×1 cm. Halve the onions and cut them lengthwise into sticks. Fry the bacon in a tall, large pot. When the bacon cubes are crispy, remove them from the pot and set aside. Brown the onions in three batches in the pan of fat. Be careful not to add too many onions at once, otherwise they will boil over and they won’t brown. When all the onions are browned, mix them with the cracklings and divide them between about 6 350 ml jars. Add marjoram to the hot fat, if desired, and pour it over the cracklings. Stir frequently with a meat fork until cooled to coat the onions and cracklings evenly.
