crispy pretzel-shaped cookies with a fine orange aroma, for about 64 pieces

Cream the butter with half the powdered sugar, salt, and half the orange zest until creamy. Stir in the egg yolk and add the flour. On a lightly floured surface, form into 4 rolls, each 40 cm long. Wrap each roll in foil and chill for 2 hours. Preheat the oven to 150°C (300°F) and cut the rolls into 2.5 cm thick slices. Roll each roll into a rope, about 18 cm long, and shape into pretzels. Place on baking sheets lined with baking paper and bake for 15 minutes. Allow to cool completely. Mix the remaining powdered sugar with 3 tablespoons of orange juice until smooth. Brush the pretzels with this sugar and sprinkle with the remaining orange zest. Allow to dry.
