- 3 egg yolks
- 150 g crème fraîche
- Sugar
- salt and pepper

Quick orange sauce
Wash the orange in hot water, dry it, peel half of the orange thinly, and cut the zest into very fine strips. Squeeze the orange and measure out 50 ml of juice. Briefly bring the egg yolks and crème fraîche to a boil in a small saucepan, stirring vigorously with a whisk. Season the sauce with orange juice, a little sugar, salt, and pepper, and fold in the orange strips.
