Ingredients for 1 servings:

  • 340 g flour
  • 2 tsp baking powder
  • 110 g sugar
  • 1 pinch of salt
  • 110 g margarine
  • 140 ml milk
  • 1 egg(s)
  • 220 g sultanas (optional)

Instructions

Mix all the dry ingredients together in a bowl. Make a small well and add the milk, egg, and margarine. Mix until smooth and there are no lumps. If you like, you can also add sultanas and fold them in, but they taste great without them too. The batter is a bit runnier than some other scone doughs, so I always fill it into muffin cases. Bake at 180°C for about 20 minutes, and you’re done! In my family in Ireland, these scones are always served with tea; they’re especially delicious when served warm. For an extra treat, you can cut the scones horizontally after baking and fill them with cream or any kind of jam. This amount of batter makes about 12 scones.
