Oven-baked plum jam – pure fruit

Ingredients for 6 servings:

  • 3 kg plums or prunes
  • 3 cinnamon sticks

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 hours; Total time approx. 10 hours 30 minutes

3 kg of fruit yields about 3 pounds of jam

Pit and halve the plums and prunes, place them in a roasting pan with the cinnamon sticks, and bake in a preheated oven at 125°C for about 2 hours with the lid closed. The fruit should be floating in its own juices at the end of the 2 hours. Stir the fruit well and continue simmering at 125°C for about 6-8 hours (or overnight). Rinse the jars with boiling water and fill with the hot jam, seal, and place the lid on – done!
