Ingredients for 1 servings:

  • 450 g tomatoes
  • 2 tsp salt
  • 1 tsp black pepper, freshly ground
  • 1 tsp sugar
  • 1 tbsp oil (olive oil), extra virgin

Preheat oven to 110°C. Halve the tomatoes lengthwise and place them cut-side up on a baking sheet. Drizzle with salt, pepper, sugar, and olive oil. Place the sheet in the oven overnight. The tomatoes should be dry, but not crispy or hard. You can eat the tomatoes immediately or place them in a jar and cover with olive oil. They will keep in the refrigerator for up to 2 weeks. Variation: Season the tomatoes with 1 tablespoon of mixed herbs, chopped garlic, and olive oil before placing them in the oven.
