Ingredients for 4 servings:
- 100 g flour
- 125 ml milk
- 3 eggs
- salt and pepper
- 3 tbsp oil
- 2 onions
- 2 garlic cloves
- 250 g tomatoes, pureed
- 300 g tomatoes, fresh
- 150g mozzarella
- 100g salami
- 100 g ham
- 85 g olives
- 1 tsp herbs, mixed Italian
- 1 bunch of chives

Pancake batter with pizza topping
Preheat the oven to 225 degrees Celsius (425 degrees Fahrenheit). Gradually mix the flour with the milk and eggs, season with salt and pepper. Brush the baking sheet with 1 tablespoon of oil, pour the batter onto it, and smooth it down. Bake the pancake batter for 9 minutes on the second rack from the bottom. Meanwhile, peel and dice the onions and garlic, and fry them in the remaining oil, then add the tomato puree. Season the sauce with salt and pepper. Wash and slice the tomatoes. Dice the mozzarella. Spread the tomato sauce over the pancake batter. Top with the salami, ham, tomatoes, mozzarella, olives, and herbs, bake in the oven for 5 minutes, and serve sprinkled with chives.
