Panna cotta is a traditional Piedmontese dessert. Although it is available ready-made from the supermarket these days, it still tastes best when made at home. This recipe uses tried-and-tested standard ingredients. First, let the gelatin soak in the milk for five minutes. Then, combine the milk and gelatin in a saucepan and heat gently over medium heat until the gelatin has completely dissolved. Do not allow the milk to boil. Now add the cream, honey, sugar, and a pinch of salt. Heat gently for another five minutes, stirring gently. The ingredients should only be blended, not whipped. Now pour the still-liquid cream into bowls and let cool slightly at room temperature. Then, refrigerate for at least six hours, but preferably overnight. Turn the finished panna cotta out onto flat dessert plates. Panna cotta tastes best with a sauce made from red berries, chocolate, or caramel.
