Amarettini – Cherry Dessert

Ingredients for 6 servings:

  • 1 cup of cream (200g each)
  • 2 cups of mascarpone (250g each)
  • 1 bag(s) of biscuits (Amarettini)
  • Amaretto
  • 1 jar sour cherries (400g)
  • 40 g chocolate sprinkles, milk

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Soak all but 8-10 amaretti biscuits in the amaretto until slightly mushy. Drain the cherries thoroughly. Whip the cream until almost stiff (it shouldn’t even begin to form butter flakes, as they would be extremely noticeable later) and mix well with the mascarpone. Fold in the cherries and layer them with the soaked amaretti biscuits in a bowl, layering them with cream on top and bottom. Decorate with the reserved amaretti biscuits and sprinkle with chocolate sprinkles. Chill thoroughly. The dessert gets its sweetness from the amaretto-amaretti biscuit.
