  • 900 g tomatoes, fully ripe
  • 2 lemon(s), organic produce
  • 1,000 g gelling sugar, 1:1

Paradise apple = a very old name for tomatoes – in Austria they are still called Paradeiser today. Remove the stems from the tomatoes, cut the tomatoes into pieces, and then puree thoroughly with a hand blender. Grate the lemon zest and add it to the tomatoes. Squeeze the lemons and add the juice to the tomatoes. Mix everything with the gelling sugar and let it steep for 2 hours. Cook the gelling sugar according to the package instructions (about 4 minutes, stirring, until bubbling) and pour hot into clean screw-top jars. DONE! Makes 4 jars. The result tastes similar to rosehip jam, but is considerably easier to make.
