Ingredients for 3 servings:
- 400 g Flour (spelled flour, 650)
- 100 g spelt flakes
- 100 g Parmesan, grated
- 1 pack of yeast (dry yeast)
- 375 ml water, lukewarm
- 1 tsp sugar
- ½ tbsp salt
- 1 egg(s), or some milk for brushing
- Parmesan, for sprinkling
- Bran or flour for the baking tray

Place the mixed flour in a bowl and make a well in the center. Crumble the yeast, dissolve it with the sugar and a little water, and stir it into the well. Sprinkle the salt onto the edge of the flour, add the Parmesan cheese and the remaining water, and beat everything into a medium-firm dough. Cover the dough and let it rise in a warm place for 30 minutes. Briefly knead again on a floured surface. Cut into three large pieces, shape into round loaves, then form into diamond-shaped loaves. Brush with egg or milk, roll the surface in Parmesan cheese, and place on the bran-dusted baking sheet. Let the loaves rise for another 15 minutes and bake in a preheated oven at 190°C for about 25 minutes.
