Pasta salad "Laughing Mouth"

Ingredients for 4 servings:

  • 300 g spiral noodles
  • 1 can of mushrooms
  • 3 gherkins
  • ½ jar beetroot
  • 50 g salad mayonnaise
  • 2 tbsp cucumber water and 2 tbsp beetroot water
  • 1 tbsp honey
  • 1 package of feta cheese, approx. 200 g

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 30 minutes

Cook the pasta according to the package instructions, pour it into a colander, and let it cool. In the meantime, open the can of mushrooms, drain the pickling water, and tip the mushrooms into a large bowl. Cut the gherkins into small pieces, as well as the beets. Crumble the feta cheese. Add everything to the mushrooms. Mix the mayonnaise with the pickling water from the cucumbers and beets, and season with honey. Mix the ingredients in the bowl well. Then carefully fold in the cooled pasta. Tip: Prepare the night before and refrigerate overnight so it can marinate well. The pasta pairs very well with the cheese, and the gherkins and beets complement each other perfectly. It’s the color of the beets, in particular, that gives the dish a very interesting shade of red, and it puts you in a good mood! Hence the name “Laughing Mouth.”
