Pasta salad with sausage and cheese

Ingredients for 8 servings:

  • 500 g pasta, small, e.g. Farfalle
  • 500 g meat sausage, alternatively Vienna sausages
  • 6 large tomatoes
  • 400 g cheese (Emmental or Gouda) in one piece
  • 1 jar gherkins (cornichons), large
  • 10 basil leaves
  • mayonnaise
  • 2 tbsp oil
  • 2 tbsp vinegar, mild
  • possibly salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta as directed on the package and let it cool. Cut the sausage into small cubes and place in a large salad bowl (for Vienna sausages, simply cut the sausages into slices about 1 1/2 cm thick). Cut the cheese into small cubes and add to the sausage in the bowl. Also dice the tomatoes and add to the sausage and cheese in the bowl. Finally, cut the cucumbers (gherkins) into slightly thick slices and add to the bowl with the ingredients. Add the cooled pasta to the ingredients and mix everything together. For the salad dressing, mix together the oil, vinegar, and mayonnaise (a little tip: add enough mayonnaise to make a slightly thicker sauce). If you like, you can also season the dressing with a little salt and pepper. Pour the dressing over the salad and mix together. Wash the basil leaves, pat dry, chop, and sprinkle over the salad. Another tip: if you don’t like vinegar/oil/mayonnaise sauce, you can also use regular salad dressing.
