Ingredients for 8 servings:

  • 300 g pasta, small (e.g. short macaroni)
  • 1 cucumber(s)
  • 200 g ham, cooked
  • 300 g cheese (young Gouda)
  • 500 g tomatoes, firm cherry or vine
  • 1 bunch parsley, flat
  • 300 g yogurt (full milk)
  • 5 tbsp mayonnaise for salad
  • 3 tbsp vinegar (wine vinegar)
  • salt and pepper
  • Sugar

Working time approx. 45 minutes; Total time approx. 45 minutes

Pasta salad with a twist with cucumber, tomatoes and cheese

Cook pasta in salted water according to package instructions until al dente, drain well, and rinse. Wash and trim the cucumber, halve lengthwise, remove the seeds, and cut into thin, short strips. Dice the ham and cheese. Wash the tomatoes and divide or quarter them. For the dip, wash the parsley and chop the leaves. Mix the yogurt with mayo and vinegar. Season with salt, pepper, and sugar. Fold in the parsley. Add the dip to the salad about 1-2 hours before serving. Mix well.
