Pasta with vegetable sauce

Ingredients for 2 servings:

  • 160 g pasta
  • ½ zucchini
  • ½ eggplant(s)
  • 1 carrot(s)
  • 2 tomatoes
  • 1 pumpkin(s), Argentinian
  • 1 onion(s)
  • olive oil
  • salt and pepper
  • oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the pasta in salted water according to the package instructions. Meanwhile, peel the onion, zucchini, squash, eggplant, and carrot as needed and cut into small pieces. Add them to a pan with olive oil and cook. If the vegetables aren’t tender enough, add a little water. Add the tomato last, once the rest is cooked. Sauté everything together until a sauce forms. Season with salt, pepper, and oregano, and serve with the pasta.
