Pea Soup with Difference

- First, all the vegetables (for the soup) are washed or cleaned, peeled and cut into small pieces. Now bring a saucepan with the vegetable stock and carrot juice to temperature and add the vegetables and peas. Add the spices and let it simmer for 2 hours.
- The meat is briefly braised in a roaster with clarified butter. Then they add the garlic in whole cloves. The onion is cut into large cubes and also added. Let it fry again and then deglaze with water. Now add the hoisin sauce – put the lid on and let it simmer for 40 minutes.
- After half of the cooking time that the soup needs, the meat and the resulting stock are added to the soup and continue to be cooked.
- Shortly before the cooking time is over, take the meat out again and pull it apart using two forks. Mix the soup briefly with a hand blender – add seasoning if necessary and put the meat back in. – Done!
- Now fill the soup into bowls or plates and garnish with herbs (to taste). A piece of fresh bread or baguette – perfect!
