Peach and blackberry jam

Ingredients for 1 servings:

  • 900 g peach(s), prepared and weighed
  • 450 g blackberries
  • 2 tbsp lemon juice
  • some tonka bean shavings
  • 1 sprig(s) of thyme
  • 1 shot of white rum, to taste
  • 500 g gelling sugar 3:1

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 40 minutes

Combine the peaches, blackberries, and gelling sugar and let stand for 2 hours. Add the lemon juice, tonka bean zest, and thyme. Bring to a boil and simmer according to the instructions. Test for settling. Shortly before the mixture is finished, add the white rum and boil again. Remove the thyme sprig. Pour into prepared jars and seal tightly.
