Peanut butter chocolate muffins

Ingredients for 12 servings:

  • 60 g peanut butter, creamy or crunchy
  • 40 g margarine or butter
  • 180 g brown sugar
  • 2 tsp butter-vanilla flavoring
  • 2 eggs
  • 150 ml milk
  • 2 tbsp cocoa powder, unsweetened
  • 180 g flour
  • 1 tsp, heaped baking powder
  • 12 tsp, leveled jam, of your choice

Working time approx. 15 minutes; Total time approx. 15 minutes

This batch is enough for 12 muffins. First, cream the peanut butter with the margarine/butter until creamy, then add the sugar and vanilla extract, and continue stirring. Add the eggs and mix until smooth. Stir in the milk and cocoa powder, then stir in the flour and baking powder thoroughly. Fill each muffin tin halfway, add a teaspoon of jam to each, and cover with the remaining batter. Bake at 160°C (320°F) for approximately 20 to 25 minutes.
