Herring salad – Grandma's style

Ingredients for 6 servings:

  • 300 g fish (Bismarck herring)
  • 100 g beetroot
  • 1 onion(s)
  • 1 apple
  • 1 tbsp capers
  • 2 eggs
  • 3 gherkins
  • 2 tbsp mayonnaise
  • 4 tbsp juice (beetroot juice)
  • 1 tbsp vinegar (white wine vinegar)
  • pepper
  • Salt
  • Bread(s) (wholemeal, baguette, toast or rolls)

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Boil the eggs hard and let cool. Wash the Bismarck herring, pat dry, and dice finely. Dice the onion and mix with the herring. Dice the beetroot and mix with the herring. Peel, core, and dice the tart apple and mix with the herring. Finely chop the capers and mix with the herring. Finely chop the eggs and mix with the herring. Finely dice the gherkins and fold into the salad. Mix together the mayonnaise, beetroot juice, and white wine vinegar and season with salt and pepper. Mix the sauce well with the herring salad and let it sit in the refrigerator for at least two to three hours. Serve with bread.
