Pear and cheese salad à la Rita

Ingredients for 4 servings:

  • 3 bulb(s)
  • 2 tsp lemon juice
  • 400g Gouda
  • 200 g cooked ham
  • 150 g yogurt
  • 1 tbsp safflower oil
  • 3 tbsp lemon juice
  • 3 tbsp crème fraîche
  • 2 tsp mustard
  • 2 pinches of salt
  • 2 pinch(s) pepper, white
  • 1 shot of milk or water if needed
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the pears and drizzle with lemon juice to prevent them from browning. Dice the Gouda cheese and ham. Combine everything in a bowl. Now, mix the dressing ingredients together—I always use a shaker—and pour it over the top. Finely chop the chives and stir in. The dressing will be very thick, but that’s how it should be. If you like, you can thin it out a bit with a splash of milk or water.
