- 500 g pear(s)
- 4 tbsp lemon juice
- 250 g celery
- 1 bunch of spring onions
- 25 g butter

- 150 g goat’s cheese
- 100 g crème fraîche
- 1 lemon(s), untreated, grated peel
- 100 g salami, sliced
- 100 g cheese (butter cheese), grated
- 2 tbsp parsley, chopped
- 500 g flour
- ½ cube of yeast, fresh
- 200 ml water, lukewarm
- 2 tbsp olive oil
- 1 tsp salt
- 1 pinch(s) of sugar
- Grease for the tray

fruity, spicy version of a pizza
First, prepare a pizza dough with 500g flour, 1/2 cube of fresh yeast, about 200ml lukewarm water, 2 tbsp olive oil, 1 tsp salt, and 1 pinch of sugar. Mix everything together and knead thoroughly. Cover and let rise in a warm place (approx. 30 to 45 minutes). Then knead the dough thoroughly again, roll it out, and place it on a greased baking sheet. Wash, quarter, core, and wedge the pears, and marinate with lemon juice. Clean, wash, and thinly slice the celery and spring onions. Sauté in a pan with heated butter for 2-3 minutes, then season with salt and pepper. Mix together the goat’s cheese, crème fraîche, lemon zest, a little salt, and pepper, and spread it on the dough. Top with the pears, celery, spring onions, and salami. Sprinkle with the cream cheese. Let it rise in a warm place for about 20 minutes. Then place the baking sheet on a rack directly on the floor of a preheated oven at 250°C and bake for about 25 minutes. Serve sprinkled with parsley.
