Peppers – feta cheese – salad

Ingredients for 3 servings:

  • 3 m.-large pepper(s), in green, yellow and red
  • 1 clove(s) garlic
  • 200 g sheep’s cheese
  • 4 tbsp olive oil or salad oil
  • 6 tbsp vinegar (herb vinegar)
  • 1 tsp Italian herbs, dried
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wash, deseed, and dice the bell peppers. Place them in a salad bowl with the finely chopped garlic, then add the vinegar and oil. Finally, stir in the diced feta cheese. Season to taste with herbs, pepper, and salt. Cover and let the salad marinate for at least an hour. Adjust the seasoning if desired. This salad pairs perfectly with grilled food or makes a light meal with ciabatta bread. TIP: If you don’t like feta cheese, you can also use Gouda, Emmental, or similar!
