Ingredients for 4 servings:
- 1 tbsp butter
- 1 tbsp flour
- 200 ml fish stock or chicken stock
- 200 ml cream
- 2 oranges
- 1 cm ginger, freshly grated
- ½ tsp turmeric powder
- salt and pepper
- 50 ml port wine
- Lime oil
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Goes well with fish and poultry with tagliatelle
Melt the butter in a pan, dust with flour, stir, and let it brown lightly. Deglaze with port wine, add the stock and the juice of 2 oranges. Season with salt and pepper. Add the ginger and simmer for 5 minutes, until the sauce thickens nicely. Before serving, add the cream and a few drops of lime oil and bring to a boil briefly. Perfect with fish dishes (use fish stock in this case), tagliatelle, or poultry dishes (with poultry stock). Tip: Orange oil also works great instead of lime oil.
