Ingredients for 2 servings:
- 4 large carrots
- 1 tbsp sugar
- ½ tsp salt
- some rice vinegar
- some water
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, peel, and grate the carrots into strips. Sprinkle with sugar and salt and let it soak in for a moment. Transfer to a sealable jar. Fill with ⅔ of the vinegar and ⅓ of the warm water. Store in the refrigerator and consume within a week.
