Pineapple marzipan muffin for the Omnia oven

Ingredients for 1 servings:

  • 65 g marzipan paste
  • 2 eggs, size M
  • 45 g butter
  • 30 g sugar
  • 100 g wheat flour type 550
  • 1 g baking powder
  • 1 pinch of salt
  • 50 g hazelnuts, whole, roasted
  • 100 g pineapple, fresh
  • Powdered sugar for dusting

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cut the marzipan into small cubes, approximately 0.5 x 0.5 cm in size. Set aside 21 whole hazelnuts and roughly chop the rest. Cut the pineapple into pieces approximately 1 cm in size. Place the eggs, butter, and sugar in a mixing bowl and mix thoroughly with a mixer. Combine the flour, baking powder, salt, and chopped hazelnuts, add to the ingredients in the bowl, and mix briefly until combined. Now fold in the marzipan and pineapple pieces with a spoon. Divide the batter among 7 silicone muffin cases and press 3 hazelnuts into each case. Bake on top of the gas stove on the smallest setting with a high flame for five minutes, then reduce the flame to half and bake for another 30 minutes until golden brown. Test with a skewer until golden brown. Bake for another five minutes if necessary. Dust the finished muffins with a little powdered sugar.
