Pink grapefruit-peach jam with cranberries

Ingredients for 1 servings:

  • 450 g grapefruit(s), pink, prepared, weighed
  • 400 g peach(s), prepared and weighed
  • 50 g cranberries
  • 1 vanilla pod(s)
  • 500 g gelling sugar, 2:1
  • 50 ml Grand Marnier

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Peel and segment the grapefruit, removing all the white pith. Collect the juice and use it. Blanch the peaches, peel them, and chop or puree them. Place the fruit in a saucepan with the cranberries and the split and scraped vanilla pod. Stir in the preserving sugar, bring everything to a boil, add the Grand Marnier, and simmer for 5 minutes. Test for settling. Remove the vanilla pod. Pour the jam into prepared jars. Screw on the lids and let stand upside down for at least 10 minutes.
