Pizza Pollo with leaf spinach

Ingredients for 4 servings:

  • 300 g flour
  • 80 ml water, lukewarm
  • 80 ml milk, lukewarm
  • 1 cube of yeast, fresh
  • some salt
  • 1 pinch(s) of sugar
  • 1 tbsp olive oil
  • 5 chicken wings, 2 chicken breasts or 2 chicken drumsticks, fried, from the day before
  • 1 package of leaf spinach, frozen, thawed and drained
  • ½ package tomatoes, pureed
  • ½ tube(s) tomato paste
  • Sugar
  • some salt and pepper
  • 1 tbsp oregano
  • 2 onions, in rings
  • 1 package cheese, grated
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make a supple, smooth dough from flour, yeast, water, milk, salt, sugar, and oil. Cover with a clean tea towel and let it rise in a warm place for 20 minutes. Sauté the tomato paste in a little olive oil in a small saucepan, deglaze with the tomatoes, add the oregano, simmer briefly, and season the sauce with salt, pepper, and sugar. Let it cool. Remove the meat from the chicken pieces from the previous day and cut into small pieces. Now roll out the dough flat on some baking paper and place it on a baking sheet. Spread the sauce on the base, add the onion rings, and top with the spinach. Finally, add the chicken. Lightly salt everything again and sprinkle with cheese. Let it rest for about 15 minutes. Then bake in a preheated oven at 200°C for 20-30 minutes. Drizzle with a little olive oil before serving, if desired.
