Plaice in Wild Garlic – Cream – Sauce

Ingredients
 

  • 250 g Plaice fillets naturally frozen
  • 250 ml Riesling
  • 1 Red onion
  • 3 tbsp Cream
  • 3 tbsp Rapeseed oil
  • Wild garlic fresh
  • Steak pepper
  • Salt

Instructions
 

  • Peel and chop the onion.
  • Roughly chop the wild garlic leaves and finely cut the stalks.
  • First fry the onion in a little oil, let it take on color.
  • Deglaze with white wine, reduce by half, then add cream and wild garlic stalks, turn the heat down.
  • Season well with steak pepper.
  • Put the fish in and simmer gently.
  • Add the wild garlic leaves, let it steep and season with salt.
