Plum jam from the oven

Ingredients for 1 servings:

  • 3 ½ kg plum(s)
  • 250 g brown sugar
  • 250 g sugar, white
  • 1 tsp cinnamon powder
  • 1 tsp cardamom powder
  • 1 tsp ginger powder
  • 3 star anise, crushed
  • 10 cloves, crushed

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 2 hours; Total time approx. 5 hours

Variation with quite a lot of spices

Wash and pit the plums. Add the spices and sugar, shake lightly. Let stand for 2 hours. Bake in the oven at 180°C for 2-3 hours (depending on the desired color of the jam). Leave the oven door slightly ajar for the first 30 minutes (if you prefer a more liquid jam, you can skip this). Instead, wedge a wooden spoon or similar object in the door. Remove the jam from the oven and puree thoroughly. Pour into hot, rinsed twist-off jars and let them cool upside down.
