Ingredients for 1 servings:
- 1 kg plum(s), ripe
- 100 ml orange(s), juice and peel, untreated
- 500 g gelling sugar, 2 plus 1
- 1 tsp gingerbread spice
Instructions

If you don’t like gingerbread spice, you can also add 2 cinnamon sticks, which must be removed after cooking.
Wash the plums and drain well. Halve the fruit and remove the stones. Purée half of the fruit flesh with the orange juice and grated zest in a blender. Cut the other half into fine pieces. Mix the chopped and puréed fruit with the gelling sugar and seasoning and let it steep for at least 3 hours. Bring to a boil in a large saucepan over high heat, stirring constantly, until the mixture is bubbling vigorously. From this point on, the cooking time begins; stir continuously. Remove the pan from the heat, fill the prepared jars to the brim with the mixture and seal with the lids.
