Ingredients for 1 servings:

  • 2.2 kg plum(s) (fully ripe plums)
  • ½ liter wine, red, dry
  • ½ liter of water
  • 6 star anise
  • ½ stalk(s) cinnamon, break into 3 equal parts
  • 9 cl plum brandy
  • 250 g rock sugar, brown

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and dry the plums, cut open along the seam, and remove the stones. Combine the red wine, rock candy, and water in a saucepan and heat until the rock candy has dissolved. Layer the fruit in jars and place a piece of 1/2 cinnamon stick and 2 pieces of star anise in each jar. Pour the hot liquid over the fruit and drizzle with equal amounts of plum brandy. Clamp the jars and carefully sterilize at 75°C for 30 minutes. Once cooled, remove the clamps and store in a cool, dark place. Shelf life: 1 year
