Ingredients for 4 servings:
- 600 g pork fillet(s)
- 2 tbsp butter
- 2 tbsp oil, neutral
- salt and pepper
- 1 onion(s)
- 4 small gherkins
- 250 ml sweet cream
- 2 tbsp mustard
- 1 tbsp vinegar (white wine vinegar)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the fillets into approximately 3 cm thick slices. Heat butter and oil in a pan and fry the meat for a maximum of four minutes on each side. Season with salt and pepper, remove from the pan, and keep warm. Peel and finely dice the onion. Finely dice the gherkins. Sauté the onion in the frying fat, then add the gherkin, cream, mustard, and vinegar. Simmer for about four minutes, stirring, then season to taste. Return the meat to the sauce and serve. Serve with rice or potatoes.
