Pork steak with cocktail sauce

Ingredients for 2 servings:

  • 2 pork steaks from the loin, cut into approximately 3 cm thick slices
  • some salt and pepper, from the mill
  • some olive oil for frying
  • 2 tbsp mayonnaise
  • 1 tbsp tomato ketchup
  • 1 tsp dill, chopped fresh or dried
  • 1 tsp dill, chopped fresh or dried
  • 1 tbsp cognac

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Preheat the oven to 140 to 150 degrees Celsius (convection oven). Place a roasting tin with a wire rack in the oven. (The meat will be placed on the wire rack to finish cooking in the oven so it is not sitting in its own juices.) Heat a frying pan with a little olive oil. Season the meat with salt and pepper and sear in the olive oil for a good minute on each side. Then leave the meat in the oven on the wire rack at around 150 degrees Celsius (300 degrees Fahrenheit) for 10 to 12 minutes. Meanwhile, mix together the mayonnaise, ketchup, dill and cognac. When the meat is cooked, remove it from the oven, place it on a warmed plate and spoon some of the sauce over the meat. This goes very well with fries or croquettes or simply a leaf salad.
