Potato and broccoli stew

Ingredients for 4 servings:

  • 500 g broccoli
  • 1 large onion(s)
  • 6 m.-sized potatoes
  • 4 Debrecziner sausages or Cabanossi
  • some bacon, optional
  • 3 tsp vegetable broth
  • some salt and pepper
  • marjoram
  • some olive oil or other oil
  • 1 ½ liters of water

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

great for cold days

Cut the broccoli into florets (peel and dice the stalks if necessary), dice the onion, cut the potatoes into thumb-sized pieces, and slice the Debrecziner. Heat a large pot with oil, sauté the onion, add the potatoes, and fill with water. Season to taste with vegetable stock, pepper, salt, and marjoram (use the latter sparingly). Add the bacon (pork rind) and cook over medium heat, stirring occasionally. After 2-3 minutes, add the broccoli and simmer until the potatoes and broccoli are tender (to taste). After about 8 minutes, add the Debrecziner. When everything is tender, remove the rind, season again, and serve. This recipe can also be made vegetarian/vegan; simply omit the sausage.
