Ingredients for 4 servings:

  • 1 kg potatoes, preferably floury
  • 250 g flour, preferably strong
  • 2 eggs
  • 2 pinches of salt

Instructions

Wash, boil, peel, and mash the potatoes while still hot. Quickly knead with the remaining ingredients until a smooth dough forms. Roll the dough into a roll, then cut approximately 2 cm thick pieces and press them into thin “flecks” by hand. Place the potato flecks in a nonstick pan and fry without adding any fat. Eat right off the stove, preferably with butter and salt. My grandmother always made the potato flecks directly on the stovetop of the wood-fired oven.
