Ingredients for 12 servings:

  • 150 g flour
  • 100 g mashed potato powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 300 g yogurt (low-fat yogurt)
  • 100 ml milk, 1.5% fat
  • 1 egg(s)
  • 50 g margarine (semi-skimmed)
  • 100 g smoked salmon
  • 1 small zucchini
  • 50 g cheese, grated
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 180°C. Place 12 paper baking cups in the baking tray. Mix the flour with the mashed potatoes, pepper, salt, nutmeg, baking powder, and baking soda. In a second bowl, combine the yogurt with the milk, egg, and melted margarine. Cut the salmon and zucchini into small cubes and stir into the egg mixture. Add the flour mixture and stir until just moistened. Pour the batter into the muffin tins and sprinkle with cheese. Bake in the oven at 180°C for approximately 20-25 minutes.
