Potatoes: Herb Noodles
The perfect potatoes: herb noodles recipe with a picture and simple step-by-step instructions.
- 750 g Potatoes
- 1 piece Egg from Mathilde
- 3 tablespoon Semolina
- 125 g Quark
- 200 g Flour
- 0,5 teaspoon Salt
- 1 tablespoon Oil herbs *
- Boil the potatoes with their peel until soft, drain the water and let them steam off for five minutes.
- Peel the potatoes and put them through the press.
- Use egg, semolina, quark, salt (not too much, because the herbs are already salted), herbs and flour to make a dough that no longer sticks to your hands. If necessary, add flour until the right consistency is achieved.
- Divide the dough into portions, roll them on flour into a thin sausage, separate small portions.
- Bring the water to a boil and season with salt. Roll noodles out of the portions between your hands and cook them in water. (have to swim upstairs).
- Place a sieve on a deep plate and let the sieved potato noodles drain for a minute and either serve immediately or place on a baking sheet to keep cool.
- Now they can be frozen or fried in hot clarified butter after cooling.
