Summer-Sun-Good Mood-Aperitif

Put two mint leaves into each champagne glass, then add two ice cubes and 30ml of ice-cold Limoncello to each glass. Top with Prosecco Spumante (also very well chilled). I recommend a Prosecco Spumante Brut. If you prefer something a little sweeter, you can also use a Prosecco Dolce Spumante. Spumante, because the bubbles stay stable longer despite the ice, Limoncello, and mint. With a Fizzante, the bubbles break down too quickly, and the quality of the Prosecco simply leaves a lot to be desired. A good Limoncello doesn’t deserve that. With good ingredients, this is a truly sparkling summer treat, whose acidity is a great way to whet your appetite. Add a little antipasti and the evening is off to a great start.
