Pumpkin spread with maple syrup

Ingredients for 1 servings:

  • 750 g pumpkin flesh from the butternut squash, peeled and roughly diced
  • 300 g maple syrup
  • 150 g honey, clear

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place all ingredients in a saucepan and heat gently. As soon as the liquid begins to simmer, foam will form on the surface. This must be removed with a slotted spoon to ensure the liquid always remains clear. Simmer gently for about 1 1/2 hours; the pumpkin will become almost transparent. If foam forms again, skim it off. At the end of the cooking time, puree the mixture with a hand blender, pour into previously sterilized jars and seal. This spread will keep for at least 6 months. It is very versatile and can be eaten on its own, for example, on bread, with cream on hot waffles, used as a cake or tart filling, or simply eaten on its own as a spoon.
