Quaghurt with quinoa and fresh fruit

Ingredients for 1 servings:

  • 100 g low-fat curd cheese
  • 150 g natural yogurt (1.5% fat)
  • 150 g mango pulp
  • 50 g blueberries, fresh or frozen
  • 10 g puffed quinoa, more if desired
  • 10 g chopped pistachios
  • ½ pack of Bourbon vanilla sugar

Mix the quark and yogurt with the vanilla sugar. Cut the mango pulp into bite-sized pieces, mix it with the blueberries, and add it to the quark mixture. Sprinkle with quinoa and pistachios. This recipe is a delicious meal for me to take to the office. I carry the quark mixture, the fruit, and the quinoa topping separately in a cooler bag and serve it fresh. It keeps you full for a long time and is full of vitamins and nutrients. I vary the fruit according to my mood, but the mango and blueberry combination is extremely delicious. The topping is also variable; chopped hazelnuts, hazelnut brittle, almond flakes, or even chocolate sprinkles work great, for example.
