Recipe from my Saxon great-grandmother

Let the cooked potatoes cool (it’s best to cook them the day before cooking), then peel and grate them. Strain the quark through a sieve and mix with the potatoes, flour, sugar, egg, salt, and grated lemon zest. If desired, add 2 tablespoons of raisins. With floured hands, form the dough into balls, flatten them, and fry in hot oil until golden brown on both sides. The potatoes can be sprinkled with sugar.
