Quark Dumplings with Sweet Surprise

Ingredients
 

For the blueberry mirror:

  • 200 g Fresh blueberries or frozen goods
  • 100 g Sugar

For the surprise:

  • 40 g Milk chocolate
  • 10 g Butter
  • 3 tbsp Cream
  • 1 tbsp Cointreau

For the quark dumplings:

  • 250 g Low fat quark
  • 3 slices Toast
  • 1 Egg
  • 1 Egg yolk
  • 50 g Sugar
  • 30 g Butter

Aside from that:

  • 2 tbsp Butter
  • 1 tbsp Breadcrumbs
  • 1 tbsp Hazelnut brittle

Instructions
 

  • Bring the blueberries to the boil with sugar and water and simmer for 5 minutes, then puree and refrigerate
  • Heat the cream and butter and melt the chocolate in them
  • Chill the mixture for about 1 hour
  • add the cointreau and beat the truffle mixture with the mixer
  • Pour the mixture into a piping bag and spray small piles on aluminum foil
  • Chill again ... .. then roll into balls between the palms of the hands
  • Chill until further use
  • the previous work steps can also be prepared the day before
  • squeeze out the quark well ...... debark and dice the toast slices
  • Shred it finely with the food processor ... or crumble it finely by hand
  • Mix the sugar and butter with the mixer until frothy
  • First mix in the egg and yolk, then mix in the quark and breadcrumbs
  • if the dough is too soft, mix in a little breadcrumbs ... at least. Chill for 1 hour
  • remove small amounts with the ice cream scoop and press in a truffle ball at a time
  • Shape into dumplings with damp hands and add to boiling salted water and leave to stand for 15 minutes over low heat
  • in the meantime, heat the butter in a pan
  • Add breadcrumbs and brittle ... roast until golden while stirring
  • Place a spoonful of blueberries on each plate as a mirror ... place the quark dumplings on top and spread the brown butter over them

Annotation:

  • Also very tasty as a sweet main course, but only for 2 people
