Quark – ham – casserole

Ingredients for 4 servings:

  • 1 kg jacket potatoes
  • salt and pepper
  • 250 g quark
  • 3 eggs
  • 100 g cream
  • 2 tbsp margarine
  • 2 tbsp flour
  • Cayenne pepper
  • 1 bunch chives, cut into rolls
  • 250 g bacon or ham

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the boiled potatoes and slice them. Layer them in a greased, ovenproof dish and sprinkle with salt and pepper. Mix the quark with the eggs and cream, then stir in the margarine and flour. Season with salt and cayenne pepper. Stir the chives and diced bacon into the mixture, reserving some of the bacon first. Spread the mixture over the potatoes, sprinkle with the remaining bacon, and bake in the preheated oven (gas mark 3-4, otherwise 180°C) for 30 minutes. Serve with a fresh green salad, such as lamb’s lettuce.
