Quick Mandarin Sour Cream Cake

Ingredients for 1 servings:

  • 300 g flour
  • 125 g powdered sugar
  • 2 egg yolks
  • 2 tbsp milk
  • ½ pack of baking powder
  • 125 g butter
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 2 small cans of tangerine(s)
  • ½ liter of milk
  • 150 g sugar
  • 2 packets of pudding powder (vanilla flavor)
  • 3 cups sour cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 35 minutes

with stirred fruit

Combine the dough ingredients and knead into a smooth dough. Let it rest in a cool place for 1/2 hour. Press the dough into a 26cm or 28cm springform pan, pulling up one edge. Preheat the oven to approximately 175°C (350°F). Cook the pudding according to the package instructions, using only 500ml of milk. Stir in the sour cream, carefully fold in the drained mandarins, and immediately pour into the springform pan on top of the dough and smooth it out. Bake the cake at 175°C (350°F) for approximately 1-1.25 hours, then let it cool in the pan. Tip: Also delicious with other fruits, such as finely diced canned peaches.
