Quick vegan fruit buttermilk

Ingredients for 1 servings:

  • 100 ml fruit juice, organic, naturally cloudy, e.g. orange, apple, grape, etc.
  • 200 ml soy milk (soy drink) or soy rice milk
  • n. B. raw cane sugar

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Mix the soy milk with the fruit juice in a large glass. The acidity of the juice causes the protein in the soy milk to precipitate, giving the mixture a buttermilk-like consistency. If you like, you can sweeten it with raw cane sugar. I don’t do this because I don’t like it too sweet. Tip: Instead of fruit juice, you can also use tart fruits like currants or raspberries and puree them with the soy milk and perhaps a little raw cane sugar, but this won’t work as quickly.
