Ingredients for 4 servings:

  • 75 g sugar
  • 500 ml white wine, dry
  • 2 tbsp lemon juice
  • 1 vanilla pod(s)
  • 3 star anise
  • 2 cloves
  • 4 quinces, approx. 320 g each
  • 1 tbsp sherry

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the sugar in a saucepan. Add 500 ml water and stir over medium heat until the sugar has dissolved. Add the white wine and lemon juice. Split 1 vanilla pod lengthwise, scrape out the seeds, and add to the pan along with the star anise and cloves. Bring the stock to a boil, then simmer for 10 minutes. Meanwhile, peel 4 quinces, quarter them, and remove the cores. Cut into thin wedges. Add the quince wedges to the stock and simmer over medium heat for 25-30 minutes until soft. Stir in 1 tablespoon of sherry and let cool.
